Asian Beef Lettuce Wraps

2 Servings


Ingredients

  • 1 tablespoon of sesame oil

  • 12 ounces of lean ground beef (93%)

  • 1 cup shredded carrot

  • 2 tablespoons of Tamari or low-sodium soy sauce

  • 2 tablespoons of teryaki sauce

  • 8-12 iceberg lettuce leaves

  • 2 tablespoons of sesame seeds

  • Salt and pepper to taste


Directions

  1. Heat a large skillet over medium heat and add the sesame oil.

  2. Once the skillet and oil are hot, add the ground beef and brown until almost cooked through.

  3. Add the shredded carrot, cook until soft while ground beef finishes cooking.

  4. Stir in the Tamari or soy sauce, teryaki, salt and pepper to taste and remove from heat.

  5. Add the beef and carrot mixture to iceburg leaves and top each with sesame seeds.


Note

To use this recipe for meal prep: Prepare the beef filling up to 3 days ahead and store it in the fridge in an airtight container until ready to serve. Reheat before serving and add to lettuce leaves.
